Brainless Monday Meal (TM) – Now With BBQ Sauce

I love anything grilled.  Smoked. Grilled and smoked. Seared and smoked. Seared, grilled, smoked and doused in sauce. Mmmmmm……bbq sauce………Unfortunately, it is wasp/flying-insect-of-all-sorts season right now where we live. They seem to enjoy a good bbq. But, I will not flip with one hand and swat at wasps with the other hand. Getting stung just splits my focus. Our family’s grilling season will start après-insect season. I am looking forward to getting out our grill, cleaning it, and getting the propane tank refilled, and then hooking it up, and…….no, really. The promise of the taste of a burger/hot dog/chicken/pork chop straight off of the grill is always worth the set-up. And with all of the Pinterest recipes bragging about grilled peaches, watermelon, pineapple and apples – oh, it’s just too much!!!!

Sigh………I’m going all Fred Flintstone over here thinking about brontosaurus ribs, and I can’t even get to the grill yet. Grilling doesn’t seem like a quick option for a Brainless Monday Meal (TM) this week, does it? Decidedly not.

So I started thinking about what things I liked about bbq meals. Besides meat, obviously, I love all of the flavors and side dishes that go along with it! Cole slaw, corn, rolls, rice, beans, bbq sauces, yum! I know, it sounds like a meal from The Colonel’s Place, doesn’t it? Let’s try to make sure a bucket doesn’t happen to you this week.

How about…….Marinated Cole Slaw and Brown Rice & Corn Cakes with Baked Chicken? Sounds pretty brainless to me, really. Trust me.

Not exactly bbq’d, or out of a bucket, but it has a taste of summer and is still pretty good for a quick meal. Hang onto you briquettes – here we go!

You will need a prebaked/rotisserie chicken for this recipe, if you want to include meat. If you are vegetarian, enjoy as is!

Marinated Cole Slaw

Serves: a bunch.

You will need:

1 bag of broccoli/carrot slaw

1/3 cup of apricot jam, we used low sugar (note: no fake sweeteners in it, just reduced sugar!)

1/4 cup apple cider vinegar

scant 1/8 teaspoon red cayenne pepper – ok, scant means almost. Basically, just wave the bottle over the salad.

Salt and Pepper to taste

Anything else you like – I added orange flavored cranberries and cashews to mine!

Here’s how:

1. Wash broccoli slaw if yours is not washed. Pat dry.

2. Mix your marinade ingredients together and pour onto the slaw.

3. Refrigerate for 24 hours. Garnish with any extras you desire.

Brown Rice and Corn Cakes

Makes: about 6 cakes

You will need:

1 1/2 cups cooked, organic brown rice

1 cup frozen organic, sweet corn (Please use organic corn! Pretty please?)

1 egg

2 tsps. garlic powder

Salt and Pepper to taste

Oil/bacon grease for frying in – bacon grease makes these taste divine!

Here’s how:

1. Preheat a pan to medium.

2. Mix brown rice, corn, garlic powder, salt & pepper,  and egg together until completely combined.

3. Add oil/bacon grease to pan.

4. Scoop 1/3 cupfuls of the mixture into the heated pan and flatten slightly with a spatula – it should look like a thick pancake.

5. Cook for 5-6 minutes, or until golden brown and flip over . Cook for 3-4 minutes on that side.

6. Remove to a plate, and cool. Refrigerate, keeps for 2-3 days days.

To assemble:

If you are using chicken, cut/shred into bite-sized pieces.

Place a rice cake on a plate, top with chicken and heat in the microwave, top with BBQ sauce. Serve with coleslaw.
